    #61 -Mushroom Soup

    Start with 2-3 onions or shallots with a bit of olive oil in ONE pot and cook on LOW until candied brown. Up the heat, then add finely diced garlic, a big handful of clean, chopped white mushrooms, and 1/2 cup of dry white wine.

    Simmer for 10-15 mins, then add 2+ cups of heavy cream with desired s+p, and a pinch or two of parsley or oregano.

    Flour and beef broth is optional if you don't want heavy cream, or if you want to also incorporate them.
